Prisoner finds its existence due to its collaboration with their growers. Since its beginning, many have worked alongside Prisoner, from the Solari Family Vineyard in Calistoga, where old school sensibilities meet new techniques, to the Korte Ranch in St. Helena, a vineyard whose diligence outlasted the Prohibition and has sustained four generations. While sampling grapes from fine-quality vineyards, they came across outstanding Zinfandel from Dry Creek, Lodi, and Amador. Thus, Saldo was born, featuring the fruit from regions where zinfandel has thrived for decades. The dark ruby colored wine has bold aromas of black licorice, black pepper, cherry, and baking spices. The palate is smooth and scintillating with a hint of chocolate leading into a voluptuous and soft finish with wonderfully velvety tannins. For pairing, the team at CWS suggests BBQ baby back ribs or a spice crusted Ahi tuna.
